El Pink dolphin It is one of the species of dolphin that lives in the Amazon River and is perhaps the most striking due to its unusual color. In some cultures it is considered a charmer, a magical animal that seduces men and women to lead them to its underwater city… and something like that has happened to us.
It's been a while since we had a washed coffee 100% Pink Bourbon and when the opportunity presented itself, we let ourselves be led to the bottom of the river. Grown at 2000m on volcanic soils, this extraordinary coffee offers us an exotic profile with notes of Strawberry Milkshake, Lemon Honey and Banana.
Diophanor Ruiz, a coffee grower since 2003 and owner of La Divisa since 2005 (Quindío, Colombia), has worked tirelessly to improve the quality of his coffee, moving away from traditional methods. With a 14-hectare farm, he has planted fruit trees and various crops that help enrich the soil and provide natural shade to the coffee trees.
A unique coffee that offers us a cup with a honeyed and malic acidity together with a creamy body. A clear example of a producer's effort to offer the best of his land.
Diophanor Ruiz He began his adventure in coffee cultivation in 2003 and has been the owner of the farm since 2005. The Currency, which has 14 hectares and is located at 1950 meters above sea level, on volcanic soil. Since its beginnings, it has planted more trees on its farm in order to provide natural shade to the coffee trees and improve the composition of the soil. The space has a large collection of fruits such as bananas, tangerines, soursops and oranges. Diofanor has always moved away from traditional farming methods in favor of more quality-focused practices.
In the production process of Pink dolphinOnce harvested and selected, the coffee cherries are fermented in water for 30 hours before being pulped. The parchment coffee is then washed and dried under controlled conditions until it reaches the ideal humidity level.
This micro-lot is 100% Pink Bourbon.

What is the exotic, traditional and funky profile?
We divide our coffee menu into 3 different profiles; exotic, traditional and funky. We also give 3 points to each profile that helps us differentiate its intensity, that is; a level 3 exotic profile would be our most exotic coffee, while level 1 would be the most moderate.
We classify our coffees with fruity and floral flavors, with a silky body and bright acidity, as an exotic profile. We classify our most classic coffees with chocolate flavors, nuts with a pronounced body and low acidity as a traditional profile. Coffees for everyone.
We classify our most experimental coffees as a funky profile with vinous and boozy flavors with a pronounced body and complex acidity, only for open minds.
How are specialty coffees rated?
Specialty coffee is scored taking into account its characteristics, both the bad, which would be the defects, and its virtues, through a protocolized system called Brazilian tasting, which would be the way to undress the coffee. Coffee always has to be CLEAN (free from defects) and SWEET because it reflects that the coffee fruit has been grown, harvested and processed correctly. Some of the attributes that are valued to have a final score are: aroma, fragrance, sweetness, body, acidity, cleanliness and the general opinion of each taster. All of these attributes are judged resulting in a final score, which to be classified as a specialty coffee must be at least 80 points. At Hidden we only work specialty coffee from 84 points.
