Flamenco It's our second Pink Bourbon On the coffee menu. A sweet and juicy coffee that combines the typical fruity notes of the variety with the boozy notes resulting from fermentation. Aromas and flavors of candy, maraschino cherry, and cocoa, with a lingering aftertaste of cherry and pecans. It has an oily body and lactic acidity that adds complexity to the cup.
This lot is the work of William Cruz and Humberto MorenoProducers from Pitalito, Huila, work collaboratively to improve the quality of their coffee and ensure the sustainability of their families. Their farms benefit from the volcanic soils and microclimates of the Colombian Massif, which favor a slow and uniform ripening of the cherries. The cherries were hand-picked, sorted by flotation, and fermented for approximately 30 days on drying beds.
pitalito It is a municipality located in southeastern Huila, one of Colombia's main coffee-growing regions. This area, situated in the foothills of the Colombian Massif and near the source of the Magdalena River, is known for its nutrient-rich volcanic soils, as well as its altitude and the diverse microclimates that develop between mountains and valleys. These conditions allow for a slower ripening of the coffee cherries, favoring the development of complex, sweet, and high-quality coffees, recognized for their aromatic profile and bright acidity.
The various producers who developed this batch work collaboratively, sharing knowledge and resources to improve both the quality of the coffee and their living conditions. This collaborative model has allowed them to sell their coffee at a fixed and more stable price, guaranteeing not only the sustainability of their families but also local economic growth and generational renewal on coffee farms. Thanks to initiatives like this, new generations find in coffee an opportunity for the future, while preserving agricultural traditions and the deep connection between the community and its land.
For this batch, the cherries were hand-picked at their optimal ripeness and then sorted by flotation, discarding any that did not reach the ideal level. The coffee was then subjected to a ripening and fermentation process on drying beds for approximately 30 days.

What is the exotic, traditional and funky profile?
We divide our coffee menu into 3 different profiles; exotic, traditional and funky. We also give 3 points to each profile that helps us differentiate its intensity, that is; a level 3 exotic profile would be our most exotic coffee, while level 1 would be the most moderate.
We classify our coffees with fruity and floral flavors, with a silky body and bright acidity, as an exotic profile. We classify our most classic coffees with chocolate flavors, nuts with a pronounced body and low acidity as a traditional profile. Coffees for everyone.
We classify our most experimental coffees as a funky profile with vinous and boozy flavors with a pronounced body and complex acidity, only for open minds.
How are specialty coffees rated?
Specialty coffee is scored taking into account its characteristics, both the bad, which would be the defects, and its virtues, through a protocolized system called Brazilian tasting, which would be the way to undress the coffee. Coffee always has to be CLEAN (free from defects) and SWEET because it reflects that the coffee fruit has been grown, harvested and processed correctly. Some of the attributes that are valued to have a final score are: aroma, fragrance, sweetness, body, acidity, cleanliness and the general opinion of each taster. All of these attributes are judged resulting in a final score, which to be classified as a specialty coffee must be at least 80 points. At Hidden we only work specialty coffee from 84 points.
